There are lots of different opinions about how to brew a sencha. I typically steep in 190 degree (Fahrenheit) water for 5 minutes. You can use 180 degree or even 170 water, or even freshly boiled if you want. Play around! Find what works for you. The hotter and longer the steep, the more compounds you will extract.
